Equipment

  • 1 Baking sheet Lined with parchment paper
  • 1 Oven Preheated to 400°F (200°C)

Ingredients
  

  • 2 pcs Flatbread Store-bought or homemade
  • 1 cup Spinach Fresh, washed
  • 1/2 cup Mushrooms Sliced
  • 2 Eggs
  • 1/2 cup Mozzarella cheese Shredded
  • to taste Salt and pepper
  • 1 tbsp Olive oil For drizzling

Instructions
 

  • Place flatbreads on the parchment-lined baking sheet.
  • Drizzle olive oil over each flatbread.
  • Evenly distribute spinach and mushrooms on top of the flatbreads, leaving space in the center for the egg.
  • Carefully crack an egg into the center of each flatbread.
  • Sprinkle shredded mozzarella cheese around the edges, avoiding covering the egg.
  • Season with salt and pepper to taste.
  • Bake in the preheated oven for about 12-15 minutes, or until the egg whites are set and the yolk is still slightly runny.
  • Remove from the oven, let cool for a minute, and serve.

Notes

You can add additional toppings as desired, such as tomatoes, olives, or cooked bacon bits.
