Equipment

  • 1 Oven For baking the potatoes and egg mixture
  • 1 Melon Baller or Spoon For hollowing out the potatoes

Ingredients
  

  • 4 Large potatoes Washed
  • 4 Eggs
  • 8 slices Bacon Cooked and crumbled
  • 1 cup Shredded cheddar cheese
  • to taste Salt and pepper
  • 2 tbsp Chopped chives For garnish

Instructions
 

  • Preheat the oven to 400°F (200°C). Pierce the potatoes with a fork and bake for 60-70 minutes until they are cooked through.
  • Once the potatoes are cooked, let them cool slightly, then cut off the top third and hollow out using a spoon or melon baller, leaving about 1/4 inch of potato on the skin.
  • Crack an egg into each hollowed-out potato. Season with salt and pepper.
  • Top each potato with crumbled bacon and shredded cheese.
  • Place the potatoes on a baking sheet and return to the oven. Bake for 15-20 minutes or until the eggs are set.
  • Garnish with chopped chives before serving.

Notes

Customize the filling by adding your favorite ingredients such as mushrooms, veggies, or different types of cheese.
