Equipment

  • 1 Large Pot For cooking the chili
  • 1 Frying pan For frying the eggs

Ingredients
  

  • 1 lb Ground beef
  • 1 cup Onion Chopped
  • 2 cloves Garlic Minced
  • 1 cup Bell pepper Chopped
  • 1 can Diced tomatoes 15 oz.
  • 1 can Red kidney beans 15 oz., drained and rinsed
  • 2 tbsp Chili powder
  • 1 tsp Cumin
  • 1 tsp Paprika
  • to taste Salt and pepper
  • 1 cup Water
  • 4 Eggs

Instructions
 

  • In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add the chopped onion and minced garlic, cook until softened.
  • Stir in the bell pepper, diced tomatoes, kidney beans, chili powder, cumin, paprika, salt, and pepper.
  • Add the water and bring to a boil. Reduce heat and simmer for 30 minutes, stirring occasionally.
  • Heat a frying pan over medium heat and cook the eggs sunny-side up until the whites are set but the yolks are still runny.
  • Divide the chili among four bowls. Top each with a fried egg and serve immediately.

Notes

For a vegetarian version, substitute ground beef with extra beans or a meat substitute.
