Equipment

  • 1 Frying pan For cooking the scrambled eggs
  • 1 Whisk For beating the eggs

Ingredients
  

  • 4 Eggs Lightly beaten
  • 1 tbsp Olive oil For cooking
  • 1/2 cup Bell peppers Chopped
  • 1/2 cup Spinach Fresh
  • 1/4 cup Feta cheese Crumbled
  • 1 tsp Dried oregano
  • to taste Salt and pepper
  • 2 Whole wheat pitas Sliced in half

Instructions
 

  • Heat olive oil in a frying pan over medium heat. Add bell peppers and cook for 3-4 minutes.
  • Add the spinach to the pan and sauté until wilted.
  • Add the beaten eggs, salt, pepper, and oregano, and scramble lightly until cooked through.
  • Stir in the crumbled feta cheese and remove from heat.
  • Stuff each pita half with the egg and veggie mixture.
  • Serve warm and enjoy your healthy meal.

Notes

For a dairy-free version, omit the feta cheese or replace with a dairy-free alternative.
