Equipment

  • 1 Oven-safe skillet For cooking and baking the frittata
  • 1 Whisk For whisking egg whites

Ingredients
  

  • 8 Egg whites Preferably fresh
  • 1 tbsp Olive oil
  • 1 cup Spinach Chopped
  • 1 cup Cherry tomatoes Halved
  • 1/2 cup Bell pepper Diced
  • 1/4 cup Onion Finely chopped
  • to taste Salt and pepper
  • 1/4 cup Feta cheese Crumbled

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat and sauté onions until translucent.
  • Add bell pepper and cook for 2 minutes.
  • Stir in spinach and tomatoes, and cook until spinach wilts.
  • In a bowl, whisk egg whites and season with salt and pepper.
  • Pour over the vegetables in the skillet and let cook for 2-3 minutes or until edges start to set.
  • Sprinkle the feta cheese on top and transfer the skillet to the oven.
  • Bake for 10-12 minutes or until the egg whites are set.
  • Remove from oven and let cool for a couple of minutes before slicing.

Notes

Feel free to add more vegetables of your choice such as mushrooms or zucchini.
