Equipment

  • 1 Medium Pot For boiling eggs
  • 1 Mixing Bowl For mixing salad ingredients

Ingredients
  

  • 6 Egg whites Boiled and chopped
  • 1/4 cup Celery Finely chopped
  • 1/4 cup Red onion Finely chopped
  • 1/4 cup Red bell pepper Finely chopped
  • 2 tbsp Mayonnaise You can use light mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 tsp Black pepper Freshly ground
  • to taste Salt
  • 1 tbsp Lemon juice Freshly squeezed

Instructions
 

  • Boil the eggs and separate the whites from the yolks.
  • Chop the egg whites and place them in a mixing bowl.
  • Add celery, red onion, and red bell pepper to the bowl.
  • In a small bowl, mix mayonnaise, Dijon mustard, lemon juice, salt, and black pepper.
  • Pour the dressing over the egg white mixture and toss well to combine.
  • Serve immediately or chill in the refrigerator for later.

Notes

This salad can also be served on a sandwich or a bed of lettuce for added texture and flavor.
