Ingredients
  

  • 6 Egg whites Separated from the yolks
  • 1 tsp Olive oil Extra virgin
  • 1/2 cup Spinach Fresh, roughly chopped
  • 1/4 cup Bell peppers Diced
  • 1/4 cup Onions Diced
  • to taste Salt
  • to taste Black pepper Freshly ground

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add onions and bell peppers, sauté until soft.
  • Add chopped spinach and sauté until wilted.
  • Pour in egg whites and gently stir with a spatula, allowing them to set around the edges before scrambling.
  • Cook to preferred doneness, season with salt and pepper.
