Equipment

  • 1 Ice cream maker For churning the ice cream
  • 1 Saucepan For heating the custard

Ingredients
  

  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 2/3 cup Granulated sugar
  • 6 units Egg yolks
  • 1 tsp Ground nutmeg
  • 1 tsp Vanilla extract
  • 1/4 cup Rum Adjust amount to taste or omit for non-alcoholic version

Instructions
 

  • In a saucepan, heat the heavy cream, milk, and half of the sugar over medium heat until it begins to steam, but do not bring to a boil.
  • In a separate bowl, whisk together the remaining sugar and egg yolks until pale and thick.
  • Slowly pour the hot cream mixture into the egg yolk mixture, whisking constantly to prevent curdling.
  • Return the mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens and coats the back of a spoon.
  • Remove from heat and add nutmeg, vanilla extract, and rum (if using). Stir to combine.
  • Let the mixture cool to room temperature, then refrigerate until thoroughly chilled.
  • Churn in an ice cream maker according to the manufacturer's instructions.
  • Transfer to a container and freeze until firm, approximately 3-4 hours.

Notes

For a stronger eggnog flavor, increase nutmeg or add additional spices like cinnamon. Adjust rum amount based on desired taste or omit entirely for a non-alcoholic version.
