Equipment

  • 1 Grill pan For grilling the eggplant and sandwich
  • 1 Small bowl For beating the eggs

Ingredients
  

  • 4 slices Bread Whole grain or your choice
  • 1 Eggplant Medium, sliced into rounds
  • 2 Eggs Beaten
  • 2 tbsp Olive oil
  • to taste Salt
  • to taste Black pepper Freshly ground
  • optional Cheese Sliced or grated

Instructions
 

  • Preheat the grill pan over medium heat and brush with olive oil.
  • Season eggplant slices with salt and black pepper and grill until tender and lightly charred on both sides. Remove and set aside.
  • Pour beaten eggs into the pan and cook as a thin omelet. Cut into halves to fit the sandwich.
  • Assemble the sandwich: place grilled eggplant slices and omelet between two slices of bread. Add cheese if using.
  • Grill the assembled sandwich in the pan until the bread is golden brown and the cheese (if used) is melted.
  • Serve hot with your choice of condiments.

Notes

For a more flavorful sandwich, add pesto or your favorite sauce inside before grilling.
