Make these delicious Eggy Zucchini Fritters as a perfect appetizer or side dish. These fritters are crispy on the outside and soft on the inside, made with grated zucchini and eggs.

Equipment

  • 1 Grater For grating the zucchini
  • 1 Frying pan For cooking the fritters

Ingredients
  

  • 2 medium Zucchini Grated and excess moisture squeezed out
  • 3 Eggs Lightly beaten
  • 1/2 cup All-purpose flour Or almond flour for gluten-free option
  • 1/4 cup Chopped green onions
  • 1/2 tsp Salt To taste
  • 1/2 tsp Black pepper Freshly ground
  • 2 tbsp Olive oil For frying

Instructions
 

  • Grate the zucchini and squeeze out as much moisture as possible using a kitchen towel.
  • In a bowl, combine grated zucchini, eggs, flour, green onions, salt, and pepper. Mix well.
  • Heat olive oil in a frying pan over medium heat.
  • Spoon the zucchini mixture into the pan to form small fritters, leaving space between each.
  • Cook for about 3-4 minutes on each side or until golden brown and crispy.
  • Remove from pan and place on paper towels to drain excess oil.
  • Serve warm with a dip of your choice.

Notes

These fritters can be served with sour cream, yogurt sauce, or your favorite dip.
