Equipment

  • 1 Frying pan For frying the eggs
  • 1 Toaster For toasting the sourdough slices

Ingredients
  

  • 2 slices Sourdough bread
  • 2 tbsp Butter For spreading on the toast
  • 2 Eggs Large
  • 1 cup Arugula Fresh
  • 1 tbsp Olive oil For frying the eggs
  • to taste Salt
  • to taste Black pepper Freshly ground

Instructions
 

  • Toast the sourdough slices until golden brown.
  • Spread butter evenly on each slice.
  • Heat olive oil in a frying pan over medium heat.
  • Crack eggs into the pan and season with salt and pepper.
  • Cook eggs until whites are set but yolks are still runny.
  • Place a handful of fresh arugula on each buttered toast slice.
  • Top each slice with a fried egg, and serve immediately.

Notes

For added flavor, you can drizzle a bit of balsamic reduction over the arugula and eggs before serving.
