  • 1 Skillet For frying eggs
  • 1 Microwave/pan For reheating pulled pork

Ingredients
  

  • 4 slices Bread Your choice of bread
  • 2 cups Pulled pork Pre-cooked
  • 4 Eggs For frying
  • 1 tbsp Butter For frying eggs
  • to taste Salt and pepper
  • 4 tbsp Mayonnaise Optional
  • 4 slices Cheese Your choice
  • 1 cup Arugula Optional for garnish

Instructions
 

  • Toast the bread slices to your preference.
  • Reheat the pulled pork in a microwave or on a pan until warm.
  • In a skillet, melt butter over medium heat. Crack the eggs into the skillet, season with salt and pepper, and fry to your liking.
  • Spread mayonnaise on one side of each bread slice, if using.
  • Place a slice of cheese on the bottom half of the bread.
  • Top the cheese with a generous amount of warm pulled pork.
  • Carefully place the fried egg on top of the pulled pork.
  • Add arugula on top of the egg, if using.
  • Cover with the other half of the bread.
  • Serve immediately and enjoy!

Notes

For a lighter version, use whole grain bread and low-fat cheese. The pulled pork can also be homemade or store-bought based on your preference.
