Equipment

  • 1 Tart Pan Preferably with a removable bottom
  • 1 Mixing Bowl For preparing the custard and dough

Ingredients
  

  • 1 1/2 cups All-purpose flour
  • 1/2 cup Butter Cold and diced
  • 1/4 cup Sugar
  • 1 large Egg yolk
  • 2-3 tbsp Cold water As needed
  • 2 cups Milk
  • 1/2 cup Sugar
  • 1/4 cup Cornstarch
  • 3 large Egg yolks
  • 1 tsp Vanilla extract
  • 2 cups Mixed fresh fruits Such as strawberries, kiwi, and blueberries

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix flour and sugar, add butter and cut it using a pastry blender until it resembles coarse crumbs.
  • Add egg yolk and water gradually, mixing until dough forms.
  • Press the dough into the tart pan evenly and bake for 15 minutes until lightly golden.
  • In a saucepan, heat milk and sugar, stirring until sugar dissolves.
  • In a bowl, whisk egg yolks and cornstarch. Gradually add warm milk mixture to the yolks, whisking continuously.
  • Return the mixture to the saucepan and cook until it thickens. Stir in vanilla extract and let cool.
  • Fill the cooled tart shell with custard, spreading it evenly.
  • Arrange fresh fruits decoratively on top of the custard.
  • Chill the tart in the refrigerator for at least 1 hour before serving.

Notes

You can use any combination of fruits for the topping. For extra shine, glaze the fruits with melted apricot jam.
