  • 12 Cupcake liners To line the muffin tin
  • 1 Mixing bowl For combining ingredients

Ingredients
  

  • 1 and 1/4 cup All-purpose flour
  • 1 tsp Baking powder
  • 1/4 tsp Salt
  • 1/2 cup Unsalted butter At room temperature
  • 3/4 cup Granulated sugar
  • 2 Large eggs Room temperature
  • 2 tsp Vanilla extract
  • 1/2 cup Whole milk Room temperature
  • 1/2 cup Rainbow sprinkles Jimmies preferred

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a mixing bowl, whisk together the flour, baking powder, and salt.
  • Beat the butter and sugar together until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with the flour mixture.
  • Fold in the rainbow sprinkles gently to avoid streaking.
  • Fill each liner about two-thirds full with batter.
  • Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  • Allow the cupcakes to cool completely on a wire rack before frosting.

Notes

To add more color, increase the amount of sprinkles or try different types of sprinkles for a varied look.
