  • 1 Non-stick skillet For cooking the egg mixture
  • 1 Whisk For beating the eggs

Ingredients
  

  • 8 Eggs Beaten
  • 2 tbsp Olive oil
  • 1 cup Fresh spinach Chopped
  • 1 cup Cherry tomatoes Halved
  • 1/2 cup Feta cheese Crumbled
  • to taste Salt and pepper
  • 4 Pita breads Warm

Instructions
 

  • Heat olive oil in a non-stick skillet over medium heat.
  • Add spinach and tomatoes, and sauté until spinach is wilted.
  • Pour in the beaten eggs and scramble gently until just set.
  • Stir in feta cheese and season with salt and pepper.
  • Divide the egg mixture among the warm pita breads.
  • Wrap or fold the pitas to enclose the filling.
  • Serve immediately.

Notes

For added flavor, you can include a dash of oregano or dill.
