Equipment

  • 1 Grill pan For grilling the asparagus and bread
  • 1 Non-stick frying pan For cooking the eggs

Ingredients
  

  • 4 slices Bread Preferably sourdough or whole grain
  • 2 Eggs Lightly beaten
  • 100 g Asparagus Trimmed
  • 4 slices Cheese Cheddar or Swiss
  • to taste Salt and pepper
  • 2 tbsp Olive oil For greasing

Instructions
 

  • Preheat the grill pan over medium-high heat. Drizzle olive oil and grill the asparagus until tender, about 5 minutes.
  • In a non-stick frying pan, heat a little olive oil and scramble the eggs until just cooked. Season with salt and pepper.
  • On the grill pan, place the bread slices and toast until lightly browned on one side.
  • On the untoasted side, add cheese slices. Top with scrambled eggs, grilled asparagus, and another slice of cheese.
  • Close the sandwich with another slice of bread, toasted side facing inwards. Grill until the cheese melts.
  • Serve hot, enjoying the crispiness and delightful flavors.

Notes

For a vegetarian twist, add sliced avocado or roasted peppers.
