Equipment

  • 1 Large pot For cooking the soup
  • 1 Knife For chopping vegetables and beef

Ingredients
  

  • 1 lb Beef stew meat Cut into small pieces
  • 2 tbsp Olive oil
  • 1 cup Onion Diced
  • 2 cloves Garlic Minced
  • 4 cups Beef broth Low sodium
  • 2 cups Carrots Sliced
  • 2 cups Potatoes Diced
  • 2 cups Celery Chopped
  • 1 tsp Dried thyme
  • to taste Salt and pepper

Instructions
 

  • In a large pot, heat olive oil over medium heat.
  • Add beef stew meat and brown on all sides.
  • Add onions and garlic, sauté until fragrant.
  • Pour in the beef broth and bring to a simmer.
  • Add carrots, potatoes, celery, and dried thyme. Season with salt and pepper.
  • Simmer for 45-50 minutes or until beef and vegetables are tender.
  • Adjust seasoning if needed and serve hot.

Notes

Feel free to add other vegetables like peas, corn, or green beans for extra flavor and nutrition.
