Huevos Rancheros with Avocado and Refried Beans Recipe

Indulge in the classic Mexican breakfast of Huevos Rancheros. Perfectly seasoned refried beans, ripe avocado slices, and sunny-side-up eggs on a warm tortilla, topped with a fresh tomato salsa.

Equipment

  • 1 Skillet For cooking the eggs and heating the beans
  • 1 Bowl For mixing the salsa

Ingredients
  

  • 4 Corn tortillas
  • 1 can Refried beans Heated
  • 4 Eggs Sunny-side-up
  • 1 Ripe avocado Sliced
  • to taste Salt
  • to taste Pepper
  • 2 Tomatoes Finely chopped
  • 1 Small onion Finely chopped
  • 1 Jalapeño Seeded and minced
  • 1/4 cup Fresh cilantro Chopped
  • 2 tbsp Lime juice
  • to taste Salt

Instructions
 

  • In a bowl, mix together tomatoes, onion, jalapeño, cilantro, lime juice, and salt. Set aside.
  • Warm tortillas in a dry skillet on medium heat for about 10 seconds on each side.
  • Spread a generous layer of heated refried beans on each tortilla.
  • Top each tortilla with a sunny-side-up egg.
  • Add avocado slices around the egg.
  • Spoon fresh salsa over each assembled tortilla.
  • Season with salt and pepper to taste.

Notes

For an added kick, include some hot sauce or chipotle pepper in adobo when plating. For a lighter version, use whole grain tortillas.
