  • 1 Saucepan For boiling the eggs
  • 1 Knife For slicing eggs and vegetables

Ingredients
  

  • 2 Whole-wheat pita bread Use gluten-free if preferred
  • 4 Eggs Boiled and sliced
  • 1/2 cup Hummus Store-bought or homemade
  • 1 Cucumber Thinly sliced
  • 1 Tomato Sliced
  • to taste Salt and pepper

Instructions
 

  • Boil the eggs in a saucepan for 8-10 minutes until hard-boiled. Peel and slice.
  • Cut the pita bread into halves and spread a generous amount of hummus inside each pocket.
  • Place sliced eggs, cucumbers, and tomatoes inside the pita pockets.
  • Season with salt and pepper to taste.
  • Serve immediately or pack for a portable meal.

Notes

For an extra flavor boost, add a sprinkle of paprika or hot sauce.
