Equipment

  • 1 Saucepan For making the lemon curd
  • 1 Mixing Bowl For preparing the tart dough
  • 1 Tart tin For baking the tart shells

Ingredients
  

  • 1 1/4 cups All-purpose flour
  • 1/2 cup Unsalted butter Cold and cut into cubes
  • 1/4 cup Sugar
  • 1 Egg yolk
  • 1-2 tbsp Cold water As needed
  • 3 Eggs
  • 3/4 cup Lemon juice Freshly squeezed
  • 1/4 cup Unsalted butter Cut into cubes
  • 1 tbsp Lemon zest Finely grated

Instructions
 

  • Combine flour, sugar, and salt in a mixing bowl.
  • Cut in cold butter until the mixture resembles coarse crumbs.
  • Add egg yolk and mix, adding cold water a tablespoon at a time until the dough comes together.
  • Wrap the dough in plastic wrap and chill for 20 minutes.
  • Roll out the dough and press into tart tins.
  • Bake at 350°F (175°C) for 12-15 minutes or until golden brown.
  • Whisk together sugar, lemon juice, eggs, and lemon zest in a saucepan.
  • Cook over medium heat, stirring constantly, until the mixture thickens, about 6-8 minutes.
  • Remove from heat and stir in butter until fully combined.
  • Cool the lemon curd slightly before filling the tart shells.
  • Fill each tart shell with lemon curd.
  • Chill in the refrigerator for at least 1 hour before serving.

Notes

For added flavor, top the tarts with a dollop of whipped cream or a sprig of mint.
