Equipment

  • 1 Mixing Bowl For mixing the cake batter
  • 1 Loaf tin For baking the cake
  • 1 Zester For zesting lemons

Ingredients
  

  • 225 g Unsalted butter Softened
  • 225 g Caster sugar
  • 4 Eggs Beaten
  • 225 g Self-raising flour Sifted
  • 1 tsp Baking powder
  • 2 Lemons Zested
  • 85 g Icing sugar
  • 2 Lemons Juiced

Instructions
 

  • Preheat the oven to 180°C (160°C fan)/350°F/gas mark 4.
  • Grease and line a loaf tin with parchment paper.
  • In a mixing bowl, cream together the butter and sugar until light and fluffy.
  • Gradually add the beaten eggs, mixing well after each addition.
  • Fold in the sifted flour, baking powder, and lemon zest until well combined.
  • Pour the batter into the prepared loaf tin and smooth the top.
  • Bake in the preheated oven for 35-40 minutes, or until a skewer inserted into the center comes out clean.
  • While the cake is baking, mix the icing sugar and lemon juice to create the drizzle.
  • Once the cake is done, remove from the oven, and while still warm, prick the top all over with a skewer.
  • Pour the lemon drizzle over the warm cake and allow it to soak in.
  • Leave the cake to cool completely in the tin before removing and serving.

Notes

Ensure the cake is still warm when you add the drizzle for maximum absorption and flavor.
