Ingredients
  

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 tbsp Poppy seeds
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 3/4 cup Unsalted butter Melted and cooled
  • 2 Large eggs
  • 3/4 cup Milk
  • 2 tbsp Lemon juice Freshly squeezed
  • 1 tbsp Lemon zest Freshly grated
  • 1 tsp Vanilla extract

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a muffin tin with muffin liners.
  • In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
  • In another bowl, beat the melted butter, eggs, milk, lemon juice, lemon zest, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
  • Divide the batter evenly among the muffin cups, filling each cup about 3/4 full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra zesty flavor, you can add additional lemon zest to the batter or top the muffins with a simple lemon glaze.
