  • 1 Muffin tin For baking the muffins
  • 1 Mixing bowl To mix the batter

Ingredients
  

  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1 tbsp Poppy seeds
  • 1 tbsp Baking powder
  • 1/2 tsp Salt
  • 1 cup Milk
  • 1/2 cup Unsalted butter Melted
  • 2 Large eggs
  • 2 tbsp Lemon juice Freshly squeezed
  • 1 tbsp Lemon zest From 1 lemon

Instructions
 

  • Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a large mixing bowl, whisk together flour, sugar, poppy seeds, baking powder, and salt.
  • In another bowl, combine milk, melted butter, eggs, lemon juice, and lemon zest.
  • Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Divide the batter evenly among the prepared muffin cups.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a twist, you can replace lemon with orange for a citrusy alternative.
