Ingredients
  

  • 2 lbs Sweet potatoes Peeled and cubed
  • 2 tbsp Olive oil
  • 1/4 cup Maple syrup
  • 1 tsp Cinnamon
  • to taste Salt
  • 1 cup Quinoa Cooked
  • 1 cup Chickpeas Drained and rinsed
  • 1 cup Spinach Fresh
  • 1/2 cup Avocado Sliced
  • 1/4 cup Pumpkin seeds Toasted

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, toss the sweet potatoes with olive oil, maple syrup, cinnamon, and salt.
  • Spread the sweet potatoes in a single layer on the prepared baking sheet.
  • Roast in the preheated oven for 25-30 minutes or until tender and slightly caramelized.
  • Divide the cooked quinoa, chickpeas, spinach, and avocado among 4 bowls.
  • Top each bowl with the maple roasted sweet potatoes.
  • Sprinkle with toasted pumpkin seeds and serve warm.

Notes

Feel free to customize the toppings to suit your preferences, such as adding roasted vegetables or a different grain base.
