Ingredients
  

  • 2 cans Chickpeas Drained and rinsed
  • 1 large Onion Chopped
  • 2 Carrots Chopped
  • 2 cloves Garlic Minced
  • 1 tsp Cumin Ground
  • 1 tsp Paprika
  • 1/2 tsp Turmeric
  • to taste Salt and pepper
  • 3 cups Vegetable broth
  • 1/4 cup Tomato paste
  • 2 cups Spinach Chopped
  • 1/4 cup Fresh parsley Chopped, for garnish

Instructions
 

  • In a large pot, sauté the onions and carrots until softened.
  • Add the garlic, cumin, paprika, turmeric, salt, and pepper. Cook for another minute.
  • Stir in the drained chickpeas, vegetable broth, and tomato paste. Bring to a simmer.
  • Let the stew cook for about 20 minutes, until the flavors meld together and the stew thickens.
  • Stir in the chopped spinach and cook for an additional 5 minutes.
  • Adjust seasoning if needed. Serve hot, garnished with fresh parsley.

Notes

Feel free to add other Mediterranean vegetables like zucchini or bell peppers to enhance the flavor.
