Equipment

  • 1 Frying pan For cooking the eggs and vegetables
  • 1 Mixing bowl For blending egg mixture

Ingredients
  

  • 4 Large eggs Beaten
  • 1 tbsp Olive oil
  • 1/2 cup Bell peppers Chopped
  • 1/2 cup Onion Chopped
  • 1 cup Black beans Cooked
  • 1 tsp Ground cumin
  • to taste Salt
  • to taste Black pepper
  • 1/4 cup Cheddar cheese Shredded
  • 2 tbsp Cilantro Chopped

Instructions
 

  • Heat olive oil in a frying pan over medium heat.
  • Add onions and bell peppers, sauté until they are soft.
  • Add black beans, cumin, salt, and pepper, and stir well.
  • Pour in beaten eggs and cook, stirring occasionally, until eggs are fully scrambled.
  • Top with cheddar cheese and let it melt.
  • Garnish with chopped cilantro before serving.

Notes

Feel free to add avocado or a squeeze of lime for added flavor.
