  • 1 Toaster or Grill For toasting the bread
  • 1 Non-stick skillet For frying the eggs

Ingredients
  

  • 2 slices Artisan bread Thick cut
  • 1 large Tomato Halved and grated
  • 2 Eggs Fried to preference
  • to taste Salt
  • to taste Black pepper
  • as needed Olive oil Extra virgin

Instructions
 

  • Toast the bread slices until golden and crispy.
  • Rub the grated tomato over the toasted bread slices, making sure to cover them generously.
  • Drizzle with olive oil and sprinkle with salt to taste.
  • Heat a non-stick skillet over medium heat and add a drizzle of olive oil.
  • Crack the eggs into the skillet, season with salt and pepper, and cook to your preferred doneness.
  • Place the fried eggs on top of the tomato-topped bread.

Notes

For a heartier meal, add slices of Spanish ham or chorizo on top of the tomato before adding the egg.
