Equipment

  • 1 Large Pot For cooking pasta
  • 1 Skillet For sautéing vegetables
  • 1 Small pan For frying eggs

Ingredients
  

  • 300 g Pasta Use your favorite type
  • 2 tbsp Olive oil
  • 1 clove Garlic Minced
  • 1 cup Bell peppers Sliced
  • 1 cup Cherry tomatoes Halved
  • 1 cup Zucchini Sliced
  • 1 tsp Italian seasoning
  • to taste Salt and pepper
  • 1/2 cup Parmesan cheese Grated
  • 4 Eggs One per serving

Instructions
 

  • Cook pasta in a large pot of salted boiling water according to package instructions; drain and set aside.
  • In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  • Add bell peppers, cherry tomatoes, and zucchini. Sauté until vegetables are tender.
  • Season with Italian seasoning, salt, and pepper.
  • In a small pan, fry the eggs to your preference (sunny-side-up or over-easy).
  • Toss the cooked pasta with the sautéed vegetables and parmesan cheese.
  • Divide the pasta among four plates and top each with a fried egg.
  • Serve immediately.

Notes

For an extra boost of flavor, consider adding a pinch of red pepper flakes or fresh basil leaves.
