Follow this recipe to prepare a delicious Pesto & Egg Tartine, a delightful open-faced sandwich topped with pesto, creamy avocado, and a perfectly cooked egg.

Equipment

  • 1 Toaster For toasting the bread
  • 1 Non-stick frying pan For cooking the egg

Ingredients
  

  • 2 slices Rustic bread Sourdough or any crusty bread
  • 2 tbsp Pesto Homemade or store-bought
  • 1 Avocado Mashed
  • 2 Eggs Cooked to preference (poached or fried)
  • to taste Salt & pepper For seasoning
  • Optional Chili flakes For garnish

Instructions
 

  • Toast the bread slices to a golden brown.
  • Spread a tablespoon of pesto on each slice of bread.
  • Top with mashed avocado and season with salt and pepper.
  • Cook the eggs in a non-stick pan until they reach the desired level of doneness.
  • Place an egg on top of each tartine and season with additional salt, pepper, and chili flakes if desired.
  • Serve immediately and enjoy your delicious Pesto & Egg Tartine.

Notes

For added flavor, you can sprinkle some grated Parmesan cheese on top.
