Equipment

  • 1 Non-stick skillet For cooking the omelette
  • 1 Spatula For flipping the omelette

Ingredients
  

  • 4 Eggs Beaten
  • 2 tbsp Milk
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper Freshly ground
  • 1 tbsp Butter
  • 1/2 lb Ribeye steak Thinly sliced
  • 1 Onion Thinly sliced
  • 1 Green bell pepper Thinly sliced, optional
  • 4 slices Provolone cheese
  • to taste Salt and pepper

Instructions
 

  • In a skillet over medium heat, cook the steak slices until browned. Season with salt and pepper.
  • Remove the steak and set aside. In the same skillet, add onions (and bell peppers if using), cooking until softened and caramelized.
  • In a bowl, whisk together the eggs, milk, salt, and black pepper.
  • Heat butter in a non-stick skillet over medium heat. Pour in the egg mixture, swirling to evenly coat the bottom of the skillet.
  • As the omelette begins to set, gently lift the edges to allow uncooked egg to flow underneath.
  • Once the omelette is mostly set but still slightly runny on top, arrange the steak, onions, (bell peppers if used), and cheese on one half of the omelette.
  • Carefully fold the other half of the omelette over the filling. Continue cooking until the cheese is melted and the omelette is fully set.
  • Serve hot.

Notes

For a lighter version, substitute half of the eggs with egg whites and use low-fat cheese.
