Follow this recipe to prepare perfect popovers, a light and airy pastry made with a simple batter of eggs, milk, and flour.

Equipment

  • 1 Popover pan or muffin tin For baking the popovers
  • 1 Mixing bowl For preparing the batter
  • 1 Whisk To mix the batter

Ingredients
  

  • 2 Large eggs At room temperature
  • 1 cup Milk At room temperature
  • 1 cup All-purpose flour Sifted
  • 1/2 tsp Salt

Instructions
 

  • Preheat the oven to 450°F (230°C). Place the popover or muffin pan in the oven while it preheats.
  • In a mixing bowl, whisk together the eggs and milk until well combined.
  • Add the sifted flour and salt to the egg mixture and whisk until smooth. Do not overmix.
  • Remove the hot pan from the oven and grease with butter or nonstick spray.
  • Fill each cup about halfway with the batter.
  • Bake for 15 minutes at 450°F, then reduce the temperature to 350°F (175°C) and bake for an additional 20 minutes, or until the popovers are golden brown.
  • Do not open the oven door during baking.
  • Remove from the oven and serve immediately with your choice of filling or spread.

Notes

For a delicious variation, add shredded cheese or herbs to the batter before baking.
