Ingredients
  

  • 3 tbsp Olive oil
  • 1 large Onion Finely chopped
  • 2 cloves Garlic Minced
  • 1 large Red bell pepper Finely chopped
  • 1 large Green bell pepper Finely chopped
  • 1 can Diced tomatoes 400 g
  • 1 tsp Paprika
  • to taste Salt
  • to taste Black pepper
  • 4 Eggs
  • 1/4 cup Fresh parsley Chopped, for garnish
  • to taste Grated cheese Optional

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large oven-safe skillet over medium heat. Add the onions and sauté until translucent.
  • Add the minced garlic and cook for another minute.
  • Stir in the chopped bell peppers and cook until they begin to soften, about 5 minutes.
  • Add the diced tomatoes, paprika, salt, and black pepper. Simmer the mixture for 10-15 minutes until the sauce thickens.
  • Make four wells in the sauce using the back of a spoon. Crack an egg into each well.
  • Transfer the skillet to the preheated oven and bake for about 10-15 minutes, or until the egg whites are set and yolks are cooked to your desired level of doneness.
  • Remove the skillet from the oven and garnish with chopped fresh parsley and grated cheese, if using.
  • Serve hot with crusty bread.

Notes

For added flavor, you can sprinkle some smoked paprika or red chili flakes before baking. This dish can also be made with a can of spicy diced tomatoes for an extra kick.
