Follow this recipe to prepare the classic Canadian dish, Poutine, featuring crispy fries smothered in rich gravy and topped with cheese curds.

Equipment

  • 1 Deep fryer or large pot For frying the fries
  • 1 Saucepan For making the gravy

Ingredients
  

  • 4 large Russet potatoes Peeled and cut into fries
  • 1 cup Cheddar cheese curds
  • 3 cups Beef or chicken gravy Hot
  • to taste Salt
  • for frying Vegetable oil

Instructions
 

  • Heat oil in a deep fryer or large pot to 350°F (175°C).
  • Fry the potato fries in batches until golden brown and crispy. Drain on paper towels and season with salt.
  • In a saucepan, heat the gravy until hot and simmering.
  • Place the fries on a serving plate, sprinkle with cheese curds.
  • Pour hot gravy over the fries and cheese curds, ensuring the curds melt slightly.
  • Serve immediately while hot.

Notes

For a vegetarian version, substitute the gravy with a vegetarian brown gravy.
