  • 1 Large saucepan
  • 1 Whisk

Ingredients
  

  • 1 cup Pumpkin puree Canned or homemade
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese Grated
  • 1/2 tsp Garlic powder
  • 1/4 tsp Nutmeg Ground
  • to taste Salt and pepper
  • 8 oz Pasta Fettuccine or any other pasta of choice
  • 2 tbsp Butter
  • 1 tbsp Fresh parsley Chopped, for garnish

Instructions
 

  • In a large saucepan, combine pumpkin puree, heavy cream, Parmesan cheese, garlic powder, nutmeg, salt, and pepper.
  • Cook over medium heat, whisking continuously until the sauce is smooth and heated through.
  • Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water.
  • In a separate pan, melt butter and add the cooked pasta. Pour the Pumpkin Alfredo Sauce over the pasta and toss to coat, adding reserved pasta water as needed to reach desired consistency.
  • Serve the Pumpkin Alfredo Pasta hot, garnished with fresh parsley.

Notes

For a more decadent version, sprinkle crispy bacon or pancetta on top before serving.
