Ingredients
  

  • 1 kg Chicken pieces Skinless, bone-in
  • 500 g Pumpkin Peeled and cut into cubes
  • 1 onion Onion Chopped
  • 3 cloves Garlic Minced
  • 2 tbsp Olive oil
  • 4 cups Chicken broth Low-sodium
  • 1 tsp Paprika
  • 1 tsp Cumin
  • to taste Salt and pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and garlic, sauté until translucent.
  • Add chicken pieces and brown on all sides.
  • Stir in paprika, cumin, salt, and pepper.
  • Add pumpkin cubes and chicken broth, bring to a simmer.
  • Cover and cook for 30-40 minutes until chicken is cooked through and pumpkin is tender.
  • Adjust seasoning and serve hot.
