Equipment

  • 1 Large Pot For boiling pasta
  • 1 Saucepan For making cheese sauce

Ingredients
  

  • 2 cups Pumpkin puree Homemade or canned
  • 2 cups Milk Whole milk preferred
  • 2 tbsp Butter
  • 2 tbsp All-purpose flour
  • 2 cups Cheddar cheese Shredded
  • 1 tsp Mustard powder
  • to taste Salt
  • to taste Pepper
  • 12 oz Macaroni pasta Cooked according to package instructions
  • 1/2 cup Parmesan cheese Grated, for topping

Instructions
 

  • In a saucepan, melt butter and add flour to make a roux.
  • Gradually whisk in milk until smooth and thickened.
  • Stir in pumpkin puree, cheddar cheese, mustard powder, salt, and pepper until cheese is melted and sauce is creamy.
  • Combine cooked macaroni and cheese sauce in a large pot and mix well.
  • Serve hot, topped with grated Parmesan cheese.

Notes

Feel free to add cooked bacon or breadcrumbs for extra flavor and texture.
