Ingredients
  

  • 1 3/4 cups All-purpose flour
  • 1 tsp Baking soda
  • 2 tsp Pumpkin spice
  • 1/2 tsp Salt
  • 1/2 cup Vegetable oil
  • 1 cup Pumpkin puree Canned or homemade
  • 1 cup Granulated sugar
  • 1/4 cup Brown sugar Packed
  • 2 large Eggs
  • 1 tsp Vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large mixing bowl, whisk together the flour, baking soda, pumpkin spice, and salt.
  • In another bowl, whisk together the oil, pumpkin puree, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  • Bake for 20-22 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For added flavor, sprinkle some cinnamon sugar on top of the muffins before baking.
