  • 1 Medium saucepan For cooking quinoa
  • 1 Mixing Bowl For combining salad ingredients

Ingredients
  

  • 1 cup Quinoa Rinsed
  • 2 cups Water For cooking quinoa
  • 4 Eggs Hard-boiled and chopped
  • 1 Cucumber Diced
  • 1 Bell pepper Diced
  • 1 cup Cherry tomatoes Halved
  • 1/4 cup Red onion Finely chopped
  • 1/4 cup Fresh parsley Chopped
  • 1/4 cup Olive oil
  • 2 tbsp Lemon juice Freshly squeezed
  • 1 tsp Honey
  • to taste Salt and pepper

Instructions
 

  • Rinse quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add quinoa, reduce the heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  • Remove from heat and let it sit for 5 minutes. Fluff with a fork and let it cool completely.
  • In a large mixing bowl, combine the cooked quinoa, chopped eggs, cucumber, bell pepper, cherry tomatoes, red onion, and parsley.
  • In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.
  • Pour the dressing over the salad and toss to combine.
  • Serve chilled or at room temperature.

Notes

You can add other vegetables or greens of your choice like spinach or avocado for extra nutrition.
