Equipment

Ingredients
  

  • 2 and 1/2 cups All-purpose flour Sifted
  • 1 and 1/2 cups Granulated sugar
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1 tbsp Cocoa powder Unsweetened
  • 1 and 1/2 cups Vegetable oil
  • 1 cup Buttermilk
  • 2 large Eggs At room temperature
  • 2 tbsp Red food coloring
  • 1 tsp Vanilla extract
  • 1 tsp White vinegar
  • 16 oz Cream cheese Softened
  • 1 cup Unsalted butter Softened
  • 4 cups Confectioners' sugar Sifted
  • 2 tsp Vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  • In a large bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
  • In another bowl, whisk together the oil, buttermilk, eggs, food coloring, vanilla, and vinegar.
  • Gradually add the wet ingredients to the dry ingredients and mix until combined.
  • Divide the batter evenly between the prepared cake pans.
  • Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and cool completely on a wire rack.
  • In a large bowl, beat the cream cheese and butter until smooth.
  • Gradually add the confectioners' sugar and beat until light and fluffy.
  • Stir in the vanilla extract.
  • Place one cake layer on a serving plate and spread a layer of cream cheese frosting on top.
  • Place the second cake layer on top and spread frosting over the top and sides of the cake.
  • Decorate as desired and serve.

Notes

You can store the cake in the refrigerator for up to 3 days. Bring to room temperature before serving.
