  • 1 Baking sheet For baking the galette
  • 1 Mixing bowl For mixing the filling ingredients

Ingredients
  

  • 1 sheet Puff pastry Thawed
  • 1 cup Ricotta cheese
  • 1/4 cup Parmesan cheese Grated
  • 2 Eggs Plus 1 for egg wash
  • 1 tbsp Fresh chives Chopped
  • to taste Salt and pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Roll out the puff pastry sheet on a floured surface.
  • In a bowl, mix ricotta, Parmesan, 2 eggs, chives, salt, and pepper.
  • Spread the ricotta mixture onto the pastry, leaving a 1-inch border.
  • Fold the edges of the pastry over the filling, creating a border.
  • Beat the remaining egg and brush over the pastry edges.
  • Bake for 25-30 minutes until golden brown and cooked through.
  • Serve warm, garnished with extra chives if desired.

Notes

Feel free to add some sautéed spinach or mushrooms to the filling for extra flavor.
