Follow this recipe to prepare a hearty Samgyetang, a traditional Korean ginseng chicken soup served as a nourishing dish.

  • 1 Large pot For boiling the soup

Ingredients
  

  • 1 whole Chicken Small, about 2 pounds
  • 1/2 cup Glutinous rice Washed and soaked
  • 6 cloves Garlic
  • 2 pieces Ginseng root Dried or fresh
  • 5 Jujubes (red dates)
  • 8 cups Water
  • to taste Salt
  • to taste Black pepper
  • 2 Green onions Chopped, for garnish

Instructions
 

  • Stuff the chicken cavity with glutinous rice, ginseng, garlic, and jujubes.
  • Place the stuffed chicken in a large pot and add water.
  • Bring to a boil over high heat, then reduce to a simmer.
  • Simmer for about 1.5 to 2 hours, skimming off any impurities.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with green onions.

Notes

For an additional flavor, you can add a few slices of ginger to the broth.
