Equipment

  • 1 Non-stick skillet For cooking the eggs and sausage
  • 1 Microwave or second skillet For warming the tortillas

Ingredients
  

  • 8 oz Breakfast sausage Removed from casing
  • 6 large Eggs Beaten
  • 1/2 cup Shredded cheese Cheddar or Mexican blend
  • 4 Flour tortillas 6-inch
  • to taste Salt and pepper
  • optional Salsa, sour cream, or hot sauce For topping

Instructions
 

  • In a non-stick skillet over medium heat, cook the sausage until browned and crumbled, about 5-7 minutes. Remove from skillet and set aside.
  • In the same skillet, add the beaten eggs, season with salt and pepper, and scramble until just set. Return the cooked sausage to the skillet and mix with the eggs.
  • Warm the tortillas in a microwave for about 30 seconds or on a skillet for about 15 seconds on each side.
  • Divide the sausage and egg mixture evenly among the tortillas.
  • Sprinkle each taco with shredded cheese. The warmth of the eggs and sausage will help melt the cheese.
  • If desired, top with salsa, sour cream, or hot sauce.
  • Serve immediately for best taste.

Notes

You can customize your breakfast tacos with various toppings like avocado slices, diced tomatoes, or chopped cilantro for added flavor.
