Equipment

  • 1 Non-stick skillet For cooking the crepes
  • 1 Whisk For beating the eggs

Ingredients
  

  • 4 Eggs Beaten
  • 1/2 cup Milk
  • 1/2 cup All-purpose flour
  • 2 tbsp Butter Melted
  • to taste Salt
  • 1 cup Mixed vegetables Chopped
  • 1/2 cup Cheddar cheese Grated
  • 1 tbsp Olive oil

Instructions
 

  • In a bowl, whisk together eggs, milk, flour, melted butter, and salt until smooth.
  • Heat a non-stick skillet over medium heat and lightly grease with olive oil.
  • Pour about 1/4 cup of the batter into the skillet, tilting the pan to spread evenly.
  • Cook for 1-2 minutes until the edges are golden, then flip and cook another minute.
  • Repeat with the remaining batter, keeping crepes warm.
  • In the same skillet, sauté mixed vegetables until tender.
  • Fill each crepe with vegetables and cheese, folding gently.
  • Serve warm and enjoy your savoury crepes.

Notes

For added flavor, try spices like oregano and basil in the filling.
