Instructions
Crack the eggs into a mixing bowl, add milk, and whisk until well combined.
Heat butter in a non-stick skillet over medium-low heat.
Pour the egg mixture into the skillet and let it sit, without stirring, for a few seconds until it begins to set.
Gently stir the eggs with a spatula, forming soft curds. Cook until the eggs are mostly set but still slightly runny.
Add the smoked salmon strips and cook for another minute until the eggs are fully set and the salmon is heated through.
Season with salt and pepper to taste.
Serve the scrambled eggs immediately, garnished with chopped chives.
Notes
For an added touch, serve with toasted bread or bagels.
