Follow this recipe to prepare a delicious Shakshuka Egg Pita, a popular Middle Eastern dish where eggs are poached in a spicy tomato sauce and served with pita bread.

Equipment

  • 1 Large skillet For cooking the tomato sauce and poaching eggs

Ingredients
  

  • 2 tbsp Olive oil
  • 1 medium Onion Chopped
  • 1 large Red bell pepper Chopped
  • 2 cloves Garlic Minced
  • 1 tsp Ground cumin
  • 1 tsp Paprika
  • 1/4 tsp Cayenne pepper Optional, for heat
  • 1 can Crushed tomatoes (14 oz)
  • to taste Salt and pepper
  • 4 large Eggs For poaching
  • 4 pieces Pita bread For serving
  • 1/4 cup Fresh parsley Chopped, for garnish

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add onion and bell pepper, cooking until softened, about 5 minutes.
  • Stir in garlic, cumin, paprika, and cayenne, and cook for another minute.
  • Add crushed tomatoes, season with salt and pepper, and simmer for 10-15 minutes until the sauce thickens.
  • Make small wells in the sauce and crack an egg into each well. Cover the skillet and cook until the eggs are set to your preference.
  • Sprinkle with fresh parsley and serve with warm pita bread.

Notes

For extra flavor, try adding some crumbled feta cheese before serving.
