Equipment

  • 1 Saucepan For boiling the eggs
  • 1 Bowl For mixing the marinade

Ingredients
  

  • 6 Eggs Large
  • 1/2 cup Soy sauce
  • 1/4 cup Mirin
  • 2 tbsp Sugar
  • 1/2 cup Water

Instructions
 

  • Bring a saucepan of water to a boil and gently add the eggs.
  • Boil the eggs for 7 minutes for a soft center.
  • Transfer the eggs to an ice bath and let them cool for 5 minutes.
  • Carefully peel the eggs and set aside.
  • In a bowl, mix together soy sauce, mirin, sugar, and water until sugar dissolves.
  • Place peeled eggs in the marinade and refrigerate for at least 2 hours or overnight for deeper flavor.
  • Serve as a topping for ramen or enjoy as a snack.

Notes

For a sweeter marinade, increase the sugar to 3 tablespoons. Adjust marination time based on desired saltiness.
