Equipment

  • 1 Medium saucepan For preparing grits
  • 1 Skillet For cooking shrimp
  • 1 Pot For poaching eggs

Ingredients
  

  • 1 cup Grits, uncooked
  • 4 cups Water
  • 1 tsp Salt
  • 2 tbsp Butter
  • 1/2 cup Cheddar cheese, shredded Optional
  • 1 lb Shrimp, peeled and deveined
  • 2 tbsp Olive oil
  • 1 tsp Cajun seasoning
  • 1 tbsp Garlic, minced
  • to taste Salt and pepper
  • 4 Eggs, poached
  • Green onions, sliced For garnish

Instructions
 

  • Bring water to a boil in a medium saucepan, add salt, and then whisk in the grits.
  • Reduce heat to low, cover, and cook for 20 minutes, stirring occasionally.
  • Stir in butter and cheese (if using), season with salt to taste. Keep warm.
  • Heat olive oil in a skillet over medium-high heat. Add the shrimp, garlic, and Cajun seasoning.
  • Cook shrimp for 2-3 minutes on each side or until pink and opaque. Season with salt and pepper to taste.
  • Spoon the grits into bowls, top with shrimp and a poached egg.
  • Garnish with green onions. Serve immediately.

Notes

For extra flavor, stir in chopped cooked bacon or sausage into the grits before serving.
