Equipment

  • 1 Frying pan For cooking chorizo and eggs
  • 1 Bread knife For slicing the baguette

Ingredients
  

  • 1 Baguette Cut in half lengthwise
  • 150 g Spanish chorizo Sliced
  • 2 Eggs Lightly beaten
  • 1 tbsp Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions
 

  • Heat olive oil in a frying pan over medium heat.
  • Add the sliced chorizo, and cook until it releases some oil and becomes slightly crispy.
  • Add the beaten eggs into the same pan with the chorizo, season with salt and pepper, and scramble until just cooked.
  • Remove the mixture from the pan and set aside.
  • Open the baguette and fill it with the chorizo and egg mixture.
  • Serve immediately while warm.

Notes

For an extra kick, add some sliced fresh jalapeños or a drizzle of hot sauce before serving.
