  • 1 Non-stick skillet For cooking eggs and spinach
  • 1 Toaster For toasting bread

Ingredients
  

  • 4 Eggs Beaten
  • 2 cups Fresh spinach
  • 1 tbsp Olive oil
  • 1 tsp Red chili flakes Adjust to taste
  • to taste Salt
  • to taste Black pepper
  • 4 slices Whole grain bread

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add spinach and cook until wilted.
  • Add beaten eggs, red chili flakes, salt, and pepper. Cook and stir until the eggs are scrambled and fully cooked.
  • Toast the bread slices in a toaster.
  • Assemble the sandwich by placing the egg and spinach mixture between two slices of toasted bread.
  • Serve immediately and enjoy!

Notes

For extra flavor, add a slice of cheese to the sandwich.
