  • 1 Wok or Large frying pan For stir-frying the ingredients

Ingredients
  

  • 2 cups Cooked rice Preferably day-old rice for better texture
  • 1 cup Kimchi Chopped
  • 2 tbsp Kimchi juice
  • 3 Eggs Beaten
  • 1 medium Carrot Finely diced
  • 2 tbsp Soy sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Vegetable oil For frying
  • to taste Salt and pepper

Instructions
 

  • Heat vegetable oil in a wok over medium-high heat. Add the diced carrot and stir-fry until slightly softened.
  • Add the kimchi and stir-fry for another 2-3 minutes until it starts to brown slightly.
  • Push the kimchi and carrot to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
  • Mix the eggs with the kimchi and carrot. Add the cooked rice, breaking any clumps.
  • Pour in the kimchi juice and soy sauce, mixing well. Stir-fry for 5-7 minutes until everything is well combined and the rice starts to get crispy.
  • Drizzle with sesame oil and give it a final stir. Season with salt and pepper to taste.
  • Serve the kimchi and egg fried rice hot, garnished with sesame seeds or chopped green onions if desired.

Notes

For added protein, you can include diced chicken breast or tofu. Adjust the spice level by adding more or less kimchi and kimchi juice.
